Who am I?

I am Veronica Pepsy Garcia and go by my middle name, Pepsy.  Born in Inglewood, CA and as a kid moved around a bit.  First living in Hawthorne, CA then Quito, Ecuador and after that Norwalk, CA and as an adult settled down in Santa Fe Springs, CA.  

Always with the love of baking to escape from the 'Real World'.  Starting with box cakes as a young bean. Later I started baking from scratch, with some recipes that have been handed down from some very wise bakers that I am blessed to have in my life.

While pregnant with my first born, I was at high risk and put on bed rest forcing me to drop out of my full-time schedule at Cerritos College.  But if you know me "Bed" is not for me.  I enrolled in a 2 hour a week cake decorating class in a local bake shop in Norwalk, CA, "Terry's Make a Cake" (Now Closed).  Where I learned the basics of decorating.  After having my little bundle of joy, I could return to Cerritos College full time and took some night classes at "Angle's Cake Decorating" located in Bell Flower, CA.  To continue learning new up to date skills I drove all over California.  In San Marcos, CA I attended a class at "Ro Z's Sweet Art Studio" with the Satin Ice Queen, Ro. 

Although I learned a lot and gained some clientele.  I was not at the level that I dreamed of.  Soon after receiving my Business Management, Business Administration and Child Development Associates Degrees.  I transferred to Northwood University to finally complete my 'book' education, receiving my Business Management Bachelors of Science Degree.  

However, deep inside I felt like my education was not complete.  I wanted to become a PROFESSIONAL Cake decorator/designer!  That is when I began to research for answers to my HUGE question; 'Where can I gain this title as quickly and affordable as possible?'  After weeks of searching, I found it, I found the school where I wish to attend.  Saved my nickels and dimes for 3 years, and was finally able to travel and study abroad to Ontario, Toronto, Canada to be a part of the "Bonnie Gordon College of Confectionery Arts" (Closed March 2017), graduated with Honors in 2014, receiving my "Professional" title.  I am now a Professional Cake Designer, and that is when Pepsy Cakes became:
                                                  "Pepsy Cake Designs".

I was lucky enough to also participate as an Assistant Baker on Cake Wars, Season 1 Episode 1.  Although the outcome was excepted with Tears. We both knew where we went wrong. 

( I would love to return as Lead Baker and demonstrate my strengths as a Baker.  As time will only tell.)

But wait, I was Still not done.  I returned to Cerritos College to hit the books once again. Graduated in December 2016 with my Professional Baking and Pastry Chef Associates Degree.  I am now considered an official "Pastry Chef".

Fast forward:  

Feb. 2017 - LA Cookie Con.
I participated in the Sweets Table Competition for the 2017 Los Angeles Cookie Con. As this was my first time competing in any type of competition.  Stunned to walk away with 1st Place (photo on the Right).

March 2017 -  San Diego Cake Show
Never in a million years would I have thought to compete on my own.  Due to my insecurities.  With the push of my love ones, I put my Big Girl Panties on and Competed. In tears, I walked away with 2nd place in my category. (photo on the Right)

I have been published for the first time.

Feb. 10 - 11, 2018

As my goal is to become an instructor. Being asked to do Demonstrations on stage and on the Main Stage was nothing but a blessing.  I was able to complete 3 demonstrations which where sponsored by Fat Daddio's and SoCal Bakers.  

March 2018 - San Diego Cake Show

This show touches my heart every single year.  This year I was part of an awesome team that walked away with 2nd place.  I also competed alone and got 1st place.  

In addition to competing I was blessed to have 2 classes that where such a hit.  I thank all my students and cake show team for all your blessings. 

 This is why I have decided not to stop....... 

I give thanks to my friends, family and clients that supported me and pushed me to:

                                                     "Just keep Swimming".
